Make Valentine's Day special by starting with breakfast

I’m shocked. It’s already February and time for Valentine’s Day. What to do for your sweetheart? After a good many years, I and others I’ve spoken to, are out of ideas.

I started asking around for something a little different. A new twist on the usual.

To my surprise at a meeting with advertising executive, Martin Peterson of Martin Peterson and Sons,  I picked up a great idea. He’s the breakfast chef for wife, Debbie.

 “I figured starting off with a Valentine’s breakfast would be the best way to make the whole day special,”he said.

Martin came up with this Valentine’s breakfast idea to add to his usual gifts for Debbie.

His breakfast chef event comes complete with place setting, decorations and cleanup. It’s a real pleaser for under ten dollars. Smart man!

I continued my research and found an impressive number of husbands who will become a chef for Valentine’s Day. They are set to prepare a special meal for their wives or favorite companion.

The women, beneficiaries of their husband turned chef, loved the idea. Whether the meal is good or bad, just the thought that he put forth a great deal of effort and anxiety, melted all their hearts.

Martin’s favorite breakfast menu features pancakes. He loves pancakes. What is more important, he has a pancake recipe he’s willing to share.

This recipe is not complicated and fairly standard. It lowers Martin’s fear of fouling up. He’s really not a cook so making breakfast suits him fine.

Valentine’s Day Pancakes


2 cups all purpose flour

4 teaspoons baking powder

2 tablespoons sugar

1 teaspoon salt

1 cup of milk

1/4 cup melted butter

2 eggs well beaten


Combine all the ingredients except the eggs. Mix gently. Beat the eggs separately and add to the mix. Combine all the ingredients. Cook on a hot griddle or frying pan. Test by dropping some water onto it and if it sizzles your pan is ready. Drop the desired amount of batter on the pan. Let the bottom brown a little and then flip them over. Enjoy with syrup, honey or whatever you like.

I asked Martin if he ever deviated and made waffles. No, he does not. Apparently waffles are too big a stretch for him. Pancakes are much safer.

I ended up giving him my waffle recipe anyway. It’s an easy one for which I have had success. The grandchildren and I have so much fun when we mix it up, I think you should try it. 

The recipe is straight out of my family’s old “Ladies Home Journal Cookbook”, copyright 1960.



2 cups of flour

1 tablespoons of  baking powder

1 tablespoons of sugar

1/2 teaspoon of salt

2 eggs

1/4 cup of melted butter

1 cup  milk


Sift together flour, baking powder, sugar, and salt.  Beat the egg yolks until light and combine with the melted butter and milk.  Add to dry ingredients and mix until smooth.  Beat the egg whites until stiff.  Fold into batter.  Bake in waffle iron.  Four servings.

We don't separate the eggs, we just beat them and add them to the butter. They are still really good!
